Cooking Advice

Beef

For Sirloin and Fore Rib roast at 200 C for 45mins per kg plus 20mins if on the bone, or 55mins per kg plus 25 mins if boned.

For slow roasting of Topside or Rolled Back Rib, cover with foil and cook at 180 C for 70 mins per kg

Lamb

For Leg, Shoulder, Rack and Saddle roast at 200 C for 35 mins per kg for "pink meat", or 55 mins per kg at 180 C for a more thorougly cooked roast.  Remember to leave roats standing for around 20 minutes before carving in order to tenderise.

Pork

Roast at 200 C for 55mins per kg plus 25mins if on the bone, or at 180 C for 80 mins per kg plus 35 mins if boned.

Remember to always consult your cooker manual to make any adjustments necessary to times.  This is especially important with fan assisted ovens or Agas.
